The first source of this ceremony is found in the Bible (Leviticus 23, 40), and over the generations different symbolic meanings where given to it. The man is wearing a Tallit (a prayer shawl that is usually worn during the Jewish morning services); and is holding in his hands the Four Spices, which contains 3 different types of branches (Lulav, Hadas, Arava) and one type of fruit (Etrog).
