The Passover holiday entails many customs relating to the basic mitzvah's (commandments): the chametz prohibition and eating matzah. For generations every family would individually 'kosherish' their household for Passover. In the past two centuries, the surging food industry has flooded the market with various food sources made particularly for Passover. Monitoring theses sources, and their compositions, became increasingly difficult. New supervision mechanisms, some familiar and some not, were thus introduced.
